When Sandrine and Fabrice, the owners of Bakehouse Mont Albert on Hamilton Street, decided to install a new commercial oven, their goal was simple - to increase production while continuing to deliver the high-quality baked goods their customers love.
However, installing the oven came with an unexpected challenge.
The oven was too large to fit through any of the bakery’s doors, meaning the only way to bring it inside was through the front window. On top of that, the building is located within a heritage overlay, which meant additional considerations by Council’s regulatory teams were required.
To help navigate the process, Sandrine and Fabrice connected with Council’s Business Permit Support Service, which provides businesses with a single point of contact when managing permits and approvals. The service helped coordinate the relevant Council teams and provided clear guidance on what permits were required.

Bakehouse Mont Albert is now back to doing what it does best, producing delicious baked goods for the local community.
